DJI Pocket 3 can shoot in either vertical or horizontal mode. 
Commonly used UVC to HDMI converters can convert the horizontal DJI Pocket 3 to HDMI





No matter how you shoot, the Pocket 3's UVC output includes both horizontal UVC and vertical UVC




Typically, Amazon UVC to HDMI adapter only capture the horizontal UVC, regardless of whether you're shooting in horizontal or vertical mode

If you shoot in the normal horizontal mode and the converter captures the horizontal UVC, then of course the HDMI output video will be correct
